This was adapted from my a friend's mother's recipe, very yummy, filling and can be varied with whatever veggies you like.
| White or Red Potatoes, peeled and cut into quarters |
| Carrots |
| Green Peppers |
| Mushrooms |
| Celery |
| Onions |
| Spices (basil, parsley, oregano, garlic whatever you prefer) |
| 1 can tomato soup |
| Optional: Crushed tomatoes |
Use as many vegetables as you need to fit the chosen casserole dish:
