SHORTBREAD:
| 2 cups flour |
| 1 cup unsalted butter, room temperature |
| 1/2 cup sugar |
| 1 bar Ghiradelli 60% Cacao Bittersweet Chocolate baking bar, chopped |
| 1 tsp Ghiradelli 60% Cacao Bittersweet Chocolate baking bar, chopped1/4 |
| 1/4 tsp salt |
DIPPING
| 1 11.5oz bag Ghiradelli 60% Cacao Bittersweet Chocolate Chips |
| 1 tbsp butter |
"Christmas Wish Star" Chocolate Cookies Directions
- Melt baking bar on a double boiler and set aside.
- Mix flour and salt together and set aside.
- In large bowl, beat butter and sugar until smooth.
- Add melted chocolate and vanilla.
- Add flour mixture to chocolate mixture and mix just until blended.
- Wrap dough in plastic wrap and chill at least for 1 hour.
- Heat oven to 350 degrees.
- Line baking sheet with parchment paper.
- On a lightly floured board, roll dough 3/8 inch thick and cut with star cookie cutters. If dough is too soft, chill another 30 min.
- Bake 7 – 9 minutes.
- Cool completely in pan.
- Melt chocolate chips with 1 Tablespoon butter in double boiler.
- Dip cooled cookie in melted chocolate mixture and let chocolate set.
